Ingredients
- 12 ounces pasta (penne or rigatoni)
- 1 tablespoons olive oil
- 1 pounds turkey sausage links, casings removed
- 2 medium zucchini, diced
- 3 garlic cloves, minced
- 1.5 cups cottage cheese
- 0.5 cups grated parmesan cheese
- 1 cup chicken Stock
- 0.5 cups reserved pasta water
- 0.3 teaspoons red pepper flakes
- 1 teaspoons salt
- 0.5 teaspoons black pepper
- 2 tablespoons fresh basil or parsley, chopped

Boil pasta: Bring a large pot of salted water to a boil and cook 12 ounces pasta (penne or rigatoni)until al dente. Reserve 0.5 cups reserved pasta water before draining.

Blend the sauce base: While pasta cooks, blend 1 cup chicken stock, 1.5 cups cottage cheese and 0.5 cups grated parmesan cheese in a blender or food processor until smooth and creamy. Set aside.

Brown the sausage: Heat 1 tablespoons olive oil in a large skillet over medium-high heat. Add 1pounds turkey sausage links, casings removed, breaking it into crumbles, and cook until browned, about 6-7 minutes or you could grill the sausages and cut into cubes

Cook the zucchini: Add 2 medium zucchini, diced and 3 garlic cloves, minced to the skillet with the sausage. Cook until zucchini is just tender, about 5 minutes

Combine everything: Lower heat to medium-low. Stir in the blended cottage cheese sauce, 0.3teaspoons red pepper flakes, 1 teaspoons salt, and 0.5 teaspoons black pepper. Add drained pasta and toss to coat, loosening with reserved pasta water as needed.6
Finish and serve: Remove from heat, stir in 2 tablespoons fresh basil or parsley, chopped, and serve immediately, topping with extra parmesan if desired.
